This recipe has all the flavors you love in an apple pie but reimagined into a raw vegan tart form. 

The tart crust is made up of all grain free flours like green banana flour, ground flaxseed and hemp protein, which are all healthy alternatives that have gut friendly resistant starches, different types of plant-based fibers to help in digestion, and vegan protein with a range of amino acids to support a healthy body.

Applesauce, dates and banana are pureed with hemp protein and coconut products to make an irresistible caramel all made from natural sugars. To top it all off, freshly sliced honeycrisp apples and a crumble made out of a mixture of seeds complete this amazing healthy dessert.

Steps

1.) Crust: Combine all the dry ingredients for the grain-free crust in a large mixing bowl and whisk together. In a separate bowl, mix together all the wet ingredients. Incorporate the dry mix into the wet mix and with your hands, form into a ball of dough. If the texture is a little crumbly add a little water but not too much that the dough sticks to your hands. Press the crust onto a 14-inch non-stick rectangular tart pan with a removable bottom.

2.) Caramel: In a food processor, pulse together the pitted dates, banana and applesauce a little bit at a time to break up the dates a little to ensure a smooth final texture. Add the rest of the caramel ingredients and process on high for 30-45 seconds or until it is thick, luscious and smooth. Using a spatula, spread the caramel evenly inside the tart shell.

3.) Crumble: Combine the hemp heart, sunflower and pumpkin seeds, sugar, cinnamon and oil in a food processor. Pulse everything for a few seconds until a crumble is formed. Set aside for garnishing.

4.) Assembly: Using a mandolin or a really sharp knife, thinly slice the apples and soak them in half of the lemon juice to prevent browning. Neatly layer the apple slices on top of the caramel and brush the top with the other half of the lemon juice. Place the tart in the refrigerator for 4 hours or up to overnight to set.

5.) Cut the tart into 12 pieces and serve each slice with a tablespoon full or two of the crumble and enjoy!
