This recipe has all the flavors of the beloved comfort food classic, the apple pie, but we’ve turned it upside down to create a super refreshing, nutrient dense version that is served cold and requires no baking and dough making!

Sweet medjool dates, golden raisins, cashews and walnuts form a sweet no-bake crust that is extremely easy to make and has no cholesterol. The filling is composed with crushed apples, fresh diced honey crisps, chia seeds, ground flaxseed, hemp hearts, soaked figs, tart cranberries and warm spices, with only natural sugars, and a full scope of vitamins and heart healthy carbohydrates.

Leave your oven off, bust out the food processor, and make this no-bake superfood cranberry apple pie in no time!

Ingredients

CRUST

  • 1 cup of walnuts, chopped
  • 1 cup of cashews, chopped
  • 1 tablespoon of hemp hearts
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of vanilla extract
  • ⅛ teaspoon of pink Himalayan salt
  • 1 cup of medjool dates, de-seeded
  • ½ cup of golden raisins

FILLING

  • 2 large honey crisp apples, cored, peeled and cut into chunks
  • ½ cup of dried cranberries, soaked
  • ¾ cup of dried figs, soaked
  • 1 teaspoon of ground cinnamon
  • ¼ teaspoon of ground nutmeg
  • ¼ cup of chia seeds
  • 2 tablespoons of hemp hearts
  • 2 tablespoons of ground flaxseed
  • ⅛ teaspoon of pink Himalayan salt
  • 1 large honey crisp apples, cored, peeled and diced
  • 2 tablespoons of maple syrup

FILLING

  • ⅓ cup of chopped of toasted pecans
  • 3 tablespoons of brown coconut sugar
  • 1 teaspoon coconut oil, softened
  • ½ teaspoon of ground cinnamon

GARNISHES

  • Apples, berries, cashews, chia seeds, dried cranberries, hemp hearts and mint

Steps

1.) Begin: In a large (32oz) mason jar, soak the dried figs and dried cranberries in filtered water for 4 hours or overnight. Gather the ingredients for the crust.

2.) Crust: In a food processor, add the walnuts, pecans, hemp hearts and spices, and pulse until everything is a coarse texture. Add the raisins, dates and vanilla, and process until everything comes together into a dough. Line a 10-inch pie pan with parchment paper brushed with a little melted coconut oil. Press the dough onto the pan with some coming up on the sides to form a rim.

3.) Filling: In a food processor, combine the apple chunks, soaked figs, soaked cranberries, cinnamon, nutmeg, hemp, flaxseed, chia seeds and salt. Process until the mixture resembles thick applesauce. Fold in the cubed honey crisps and maple syrup and spread the filling into the pie shell.

4.) Crumble: Rinse the food processor and add the toasted pecans, coconut sugar and coconut oil. Pulse into a crumbly texture and sprinkle on top the pie.

4.) Finish: Set the pie in the refrigerator for at least an hour, or overnight. If desired, garnish the pie with sliced apples, fresh berries, cashew pieces, chia seeds, dried cranberries, hemp hearts and sprigs of mint. Cut into 12 slices and serve!

Tips

  • Storing: cover the pie tightly with cling film and store in the fridge
  • Shelf life: 7-9 days in a really cold humidity free fridge
  • Soaking the dried fruit overnight will produce best results
  • Setting the pie overnight will also produce the best result

Q&A

  • Can I use a different kind of apple? Any firm and crunchy apple works in this recipe. Fuji, gala and Jonagolds will have a similar taste as the original. Granny smiths and other green apples are lovely if you are a big fan of their tart flavor.
  • Can I use dates instead of the other dried fruits? Yes. I decided to use soaked figs and cranberries for a different flavor other than dates which is commonly found in raw dessert recipes.
  • Can I substitute the nuts for a different kind? Cashews can be substituted for brazil, pine nuts or macadamia nuts because their fat content and textures are similar to each other. Substitute pecans and walnuts for barukas nuts or unblanched almonds (with skin) for the same reason prior.
