This take on fajitas lacks nothing in flavor, but caps the calories just right. Made with fresh portobellos, onions, bell peppers, garlic and beautiful hemp seeds. Hemp seeds are a great addition to many recipes, adding a boost of flavor, nutrition and texture.

Hemped Up (Vegan) Mushroom Fajitas
2 or 3 Portobello Mushrooms (Or Couple Handfuls of favorite Mushroom)
1/2 Red Onion
1 small hot pepper or .5 Bell Pepper
2 Garlic Cloves
2 Heaping Tbls Organic Hemp Seeds
1 Tbls Olive Oil
1 Tbls Hemp Oil
.5tsp Paprika
.5tsp Onion powder
.5tsp Garlic powder
.25tsp Cayenne or Chipotle powder
1tsp Dried Oregano
1.5 tsp Kosher salt
1. Slice veggies to any consistent size you prefer and thinly slice garlic cloves.
2. Add olive oil and veg to hot sauté pan, starting with shrooms ending with garlic.
3. Season with salt and spices.
4. Sauté for about 6 minutes until desired texture is achieved.
5. Finish with Hemp Seeds and Oil and Cook until seeds are nicely toasted!
